Warm milk in the microwave, add 1 tsp of sugar and yeast. Mix and let sit until yeast has activated.
In a KitchenAid with a hook attachment, combine yeast mixture, butter, sugar, and 1/2 egg. Add flour, cinnamon, and a pinch of salt. Let rest in a warm place until doubled in size.
To make the filling, combine all of the ingredients together.
Once the dough has risen, roll it out to a rectangular shape and spread the filling. Fold the dough 1/3 up and the bottom 1/3 over it. Cut 8 stripes and swirl them. Tuck in the tails under each bun.
Preheat oven to 375F and let the buns rise again in the meantime. Cover in egg wash (remaining 1/2 egg), and bake until ready.
Once out of the oven, brush with heated corn syrup and sprinkle with pearl sugar.
