Quick, with ingredients I already had in the house.
What I Didn’t Like
This chili is very very good. But I still think there’s something I can add to it. Still can’t figure out what though.
I don’t like super hot dishes, so I passed on the jalapeno peppers.
Used only 1 onion instead of two, cuz I’m too lazy to dice two onions! Also, two felt like too much for the meat ratio.
Substituted beef broth for water, for extra flavor.
Added 1/2 tsp of mustard powder, because I like it.
This recipe makes TONS of leftovers. Maybe a bit less if your family is anywhere >2, but still. As long as I don’t need to worry about dinner / work lunch for a day or two, I’m satisfied. While I love cooking, sometimes it’s so nice not to cook while still having good food to feed my constantly hungry boyfriend. Seriously, are they ever not hungry?
Make it Again?
Yes! This is a great recipe, that came at a time that I was really craving some. Is there anything better than getting to eat the food that you’re craving for?
It’s tomatoes on bread you guys, what’s not to like?? Unless you don’t like tomatoes, in which case this recipe is def not for you (Also, that’s weird – tomatoes = life).
Ali’s pictures show “sprinkles” of tomatoes, almost like a flavoring addition, but I decided to go for it full on, cuz I like living on the edge. Mind you, it’s a Friday night, I’m 24, and I’m covered in blankets, petting my cat while writing a recipe review. Super extreme. Anyway! I loaded this thing up with tomatoes, to the point that they were overflowing and making a huge mess everywhere. And mess, as we all know, improves food to the nth degree.
Instead of using the oven/toaster method, I ended up warming the bread on a pan with a rather generous knob of butter. Why? because butter. Duh.
Make it Again?
I gotta admit, it’s quite rare for me to be so obsessed with a recipe. I usually go crazy for “minimalist” recipes, that call for less than 5 ingredients, because those are the hardest to nail. And let me tell you, this recipe definitely nailed it. In fact, after I finished my big slice of bread, I went for another one. And then, since I had some common sense left, I decided it’ll be healthier to just make a salad out of it. So I diced another tomato, added garlic, salt&pepper, and gobbled the entire thing up. Do you know what happened next? I went for another tomato. And then another one.
