I wanted to make flatbread with radishes and asparagus, to make up for the lack of vegetable consumption throughout the week. I intended to use the tarka flatbread recipe I usually make as the base, but it came out horribly. Even though I measured out the flour by grams, the dough seemed way too wet. I added about 1/2 cup more flour, but it was still suspiciously looking.
Either way, thankfully I was smart and didn’t prepare the cheese mix, vegetables and greens to put on the flatbread before I actually baked one to try it out. Good thing I did, because it came out like a rock with a plastic center. What a disappointment!
I added some cumin seeds, turmeric, and chili pepper flakes to the mix in order to make it a bit more flavorful. This is what I did in the last few times I tried it and it went wrong, and although some species should not change the chemical composition of the dough, I can’t help but wonder…
Either way, I had to prepare the salmon and veggies. I tried the marinade suggested in the recipe, and thank god again to my newfound wisdom for trying it before pouring it all over the dish – it was so gross! I had to wash my mouth with water, that’s how bad it was.
I ended up whipping up a quick marinade of dijon mustard, red wine vinegar, olive oil, a bit of lemon, and sugar. It was so much better, but I was annoyed with the wasted hours and the messy kitchen I had to face.
