I ordered a veggie chow mein, but it was so bad I really couldn’t eat it: overcooked noodles, and translucent, chicken-smelling sauce. After spending a considerable time complaining, I went to the store to buy chow mein ingredients. Noodles, frozen veggies, and baby shrimp. I don’t understand why they need to put so many chemicals in the noodles, especially since they have such a short expiry date. I keep forgetting how bad frozen vegetables taste! So much better to just cut fresh ones.
The sauce was a mix of soy sauce, teriyaki, a bit of sugar, and apple vinegar to replace the rice vinegar my mom didn’t have. It was pretty good, I’m glad I didn’t put the seaseme oil in there because I don’t like the way it tastes.
It was prety easy to make, but the noodles were interwind and they were not giving up on refusing to incorporate the other ingrideitns in! Regardless, it was tasty (espeically the baby shrimps), and I have leftovers as lunch for today.
The day before, I decided to utilize the remaining asparagus and artichokes into a nice salad with the usual dressing (dijon mustard, red wine vinegar, olive oil, lemon, a bit of honey). I also cooked a quick rice-grain blend and mixed it with some feta cheese. Unfortunately I wasn’t very smart and mixed the dressing in the night before eating it – a soggy surprise was waiting for me at lunch time… At least I snacked on the rice!
I really need to be eating more fruits&veggies, I’ve been cheating on this lately…
