When I was in Toronto last week, I had breakfast at a place called ‘nutbar‘. It’s the kind of health-conscious place that sells you turmeric lattes for $6.50 made out of ‘nutbar milk’ (“a custom blend of organic cashew, almond and coconut milks”). Now, to be completely honest with you – the only reason why I was even able to afford said $6.50 latte, is because work was covering food expenses. Just to put it out there. But, I’m sure glad they did! The fancy turmeric latte was lovely, and when I tried their sweet nutbar toast, I knew I’d have to make it once I’m back home.This toast is a perfect replica of the one served in Toronto. It’s sweet and delicious and is sure to fuel you for several hours. I’d recommend not skipping on the coconut butter – I know it might seem indulgent, but it really ties the dish together. As a nod to my fellow Torontonians, I have this toast with a big glass of almond milk (purchased from Costco, good ol’ regular house brand 😉).
1 slice of whole-wheat bread (preferably a thick one)
Natural peanut butter (or almond butter)
Toast the bread until crisp. Once cooled a bit (you don’t want the butters to drip), spread coconut butter and peanut butter. Sprinkle with hemp and chia seeds, drizzle some honey – and top with banana slices.
