My mom started working a week ago. By “working”, I mean she can finally do her practicum in the hops of regaining her nursing license. It’s been 6 years since we moved here, and only now we’re somewhat getting towards the end. Immigration is not easy you guys.
In those past 2-3 days, my dad has been acting like a traditional cave man. He is utterly unable to cook anything for himself, and has resorted to takeouts and calling me to find out what’s cooking. Unfortunately for him (and for Ben), the only think that’s been cooking for the past several weeks have been ice cream custards.
Having to save my dad and my sister from possible starvation, I decided it’s time for me to get back to the not-ice cream part of my kitchen. BUT. I had ZERO desire to cook/eat anything. You know those days that you know you have to make dinner, you’re scrolling through recipes and looking for inspiration, but NOTHING seems right? that was me that night.
Until I saw a recipe that spoke to me. Almost literally. It whispered sweet words: “easy”, “quick”, “bread”, “cheese”, “warm”, “pesto”, “semi-pizza”. My heart was pleased. I knew I have found the perfect recipe. And let me tell you guys, those sweet whispers did not lie. These Chicken Pesto Open Faced Sandwiches is every bit as delicious, easy, and satisfying as it sounds.
My dad was pleased (after a few “ughhh is this a vegetarian sandwich you gave me???” growls before he found the chicken), my picky eater sister loved it, and Ben had seconds (and then thirds). All is well.
